Preparation steps

    Whisk yolks and sugar until thick ribbon.

    Whisk whites to stiff peaks with a pinch of sugar.

    Fold whites into yolks in 3 additions.

    Sift and fold in flour.

  5. 5

    Pipe 8-10 cm fingers on parchment.

  6. 6

    Dust with icing sugar twice (wait 5 min between).

  7. 7

    Bake 10-12 min at 190°C.

  8. 8

    Sponge should be dry to the touch but soft inside.
