How does it work?
Sourdough starter is made of flour and water in a ratio defined by its hydration. A 100% hydration starter has equal parts flour and water (1:1 ratio). At 50%, it contains 2 parts flour to 1 part water. This calculator breaks down the total starter weight into its two components and calculates the remaining flour to add at mixing.
