Preparation steps

    Heat cream to a simmer.

    Pour over chopped dark chocolate. Wait 1 min.

    Stir from centre outward until emulsified.

    Add soft butter, blend smooth.

  5. 5

    Use at 35°C for pouring, or cool for piping.
