Preparation steps

    Bloom gelatin in cold water.

    Cook sugar, glucose and water to 127°C.

    Pour hot syrup over melted gelatin while whisking.

    Whip on high speed until tripled in volume and lukewarm (10-15 min).

  5. 5

    Add vanilla (or other flavouring and colour).

  6. 6

    Pour into cornstarch-dusted frame.

  7. 7

    Set 4-6h at room temperature.

  8. 8

    Cut with oiled knife, toss in icing sugar-cornstarch mix.
