Preparation steps

    Make anglaise: heat milk + cream, pour over yolks + sugar. Cook to 82°C.

    Pour over chopped milk chocolate. Emulsify.

  3. 3

    Add bloomed gelatin.

  4. 4

    Cool to 30°C. Fold in whipped cream.

  5. 5

    Pour into moulds immediately.
