Preparation steps

    Make an anglaise base: yolks + sugar + lime juice, cook to 82°C.

    Add bloomed gelatin. Add lime zest and finely chopped mint.

    Cool to 30°C.

    Fold in whipped cream.

  5. 5

    Pour into moulds, freeze.
