Preparation steps

    Make pâte à bombe: whisk yolks + sugar over bain-marie, then whip until cool.

    Fold in mascarpone and coffee extract.

    Add bloomed gelatin (dissolved in a splash of warm cream).

    Fold in whipped cream.

    Pour into moulds.
