Preparation steps

    Infuse coffee beans in cream (hot), strain.

    Reheat cream, add bloomed gelatin.

    Pour over white chocolate. Emulsify.

    Add remaining cold cream. Blend.

    Refrigerate overnight.

    Whip lightly or use as a pourable ganache.
