Preparation steps

Cream butter and icing sugar.

Add eggs, lime zest and finely chopped fresh mint.

Add flour and a pinch of salt. Mix until just combined.

Wrap in film, refrigerate 2h minimum.

Roll to 3 mm, line tart rings.

Blind bake 12-15 min at 165°C.
