Preparation steps

    Peel and slice fresh ginger.

    Blanch 3 times to reduce spiciness.

    Simmer in sugar syrup (equal parts sugar and water) for 1h.

    Let cool in syrup overnight. Repeat 2-3 times, adding sugar each time.

    Drain. Toss in granulated sugar.

    Dry on rack. Store airtight.
