Preparation steps

Cut orange peel into 5 mm strips (remove most pith).

Blanch 3 times starting cold.

Simmer in sugar syrup, increasing concentration over 3-5 days.

Drain, dry on rack until tacky.

Dip each strip halfway in tempered dark chocolate.

Set on parchment. Let crystallise.
