Preparation steps

    Whisk egg whites (or meringue powder + water) to frothy.

    Add sifted icing sugar gradually.

    Beat on medium-high until stiff, glossy peaks (5-7 min).

    Add a few drops of lemon juice.

    Thin with water for flooding, leave thick for piping.

    Cover with damp cloth when not in use (dries quickly).
