Preparation steps

    Make Italian meringue: sugar to 121°C onto whipped whites.

    Whisk until cool.

  3. 3

    Fold in whipped cream, honey, toasted almonds, pistachios and candied fruit.

    Pour into lined loaf tin or mould.

  5. 5

    Freeze minimum 6h.

  6. 6

    Slice and serve with coulis.
