Preparation steps

    Slice lemons or cut peel into strips.

    Blanch 3 times (start cold each time) to remove bitterness.

    Prepare a 30° Brix syrup. Add lemon.

  4. 4

    Bring to a simmer each day, increasing sugar by 5° over 5-7 days.

  5. 5

    Final syrup: 70° Brix.

  6. 6

    Drain and dry on rack. Optionally dip in tempered chocolate.
