Preparation steps

    Quarter oranges, scoop out flesh. Cut peel into strips or cubes.

    Blanch 3 times starting cold to remove bitterness.

    Prepare syrup (sugar + water 1:1). Add peel.

    Simmer gently, adding sugar over 5-7 days until peel is translucent.

    Drain, dry on rack.

    Store in syrup or dried, coated in sugar.
