Preparation steps

Make Italian meringue: sugar to 121°C onto whipped whites.

Whisk until cool.

Fold in whipped cream, honey, toasted almonds, pistachios and candied fruit.

Pour into lined loaf tin or mould.

Freeze minimum 6h.

Slice and serve with coulis.
