Preparation steps

    Cook sugar, water and glucose to 155°C.

    Pour onto oiled marble slab.

    Divide. Colour and flavour each portion.

  4. 4

    Pull one portion until satin-white.

  5. 5

    Form striped log: wrap coloured around pulled sugar.

  6. 6

    Stretch and cut into small pillows (berlingot shape).

  7. 7

    Cool completely. Store airtight (humidity-sensitive).
