Preparation steps

    Combine sugar, glucose and cream in a heavy saucepan.

    Cook stirring to 118°C (soft ball stage).

    Add butter and salt, stir to combine.

    Pour into parchment-lined frame.

  5. 5

    Cool completely (several hours).

  6. 6

    Cut into pieces, wrap in cellophane or parchment.
