Preparation steps

    Cook sugar and glucose to light amber (155°C).

    Fold in warm flaked almonds quickly.

    Pour onto oiled marble slab or silicone mat.

    Roll flat immediately with oiled rolling pin.

    Cut or shape while hot.

    Store in airtight container with silica gel (humidity-sensitive).
