Preparation steps

Crust: crush biscuits, mix with melted butter. Press into tin. Bake 10 min at 160°C.

Beat cream cheese until smooth.

Add sugar, beat. Add eggs one at a time.

Add cream, vanilla, a squeeze of lemon juice.

Pour onto crust.

Bake 55-65 min at 150°C in bain-marie. Centre should still wobble.

Turn off oven, leave door ajar 1h. Refrigerate overnight.
