Preparation steps

Mix flour, water, yeast, salt and olive oil: speed 1 for 5 min, speed 2 for 5 min.

Bulk ferment 2h with 2 folds.

Oil a sheet pan generously. Turn dough out onto pan.

Stretch to fill pan with oiled hands. If dough resists, rest 15 min and stretch again.

Press dimples with fingertips.

Proof 30-45 min. Drizzle olive oil, add toppings (flaky salt, rosemary, tomatoes).

Bake 20-25 min at 230°C. Golden and crisp.
