Preparation steps

    Mix flour, water, yeast, salt, olive oil, a pinch of sugar: speed 1 for 4 min, speed 2 for 5 min.

    Bulk ferment 1h.

    Divide into 120 g pieces. Shape into elongated ovals.

    Place on trays, dust with flour.

    Proof 45 min.

    Bake 12-15 min at 220°C.

    Cool on rack. Split and fill.
