Preparation steps

Make beurre noisette: melt butter until golden and nutty, strain.

Whisk egg whites, sugar, ground almonds and flour.

Fold in warm beurre noisette.

Rest batter 1h in fridge (optional but better).

Pipe into buttered financier moulds.

Bake 12-14 min at 200°C.

Unmould while still warm.
