The base temperature rule
In baking, the base temperature is the sum of 3 temperatures (room + flour + water) needed to reach the target dough temperature. The standard formula: Water = Base temp - Room - Flour. The base temperature varies: ~54°C for slow mixing, ~60°C with a spiral mixer, ~70°C with an intensive mixer.
