Preparation steps

    Mix pre-cooked corn flour (PAN), warm water, salt and a drizzle of oil.

    Knead by hand until smooth, non-sticky dough. Rest 5 min.

    Divide into 80-100 g portions, shape into thick discs (1.5-2 cm).

  4. 4

    Cook on a hot griddle (budare) or skillet with a little oil, 5 min per side.

  5. 5

    Crust should be golden and firm.

  6. 6

    Finish in oven at 200°C for 10-15 min if desired (puffier centre).

  7. 7

    Slice open and fill as desired.
