Preparation steps

    Make dry caramel (dark amber).

    Deglaze with hot cream + milk.

    Pour over yolks + sugar. Cook to 82°C.

    Add salted butter, blend.

  5. 5

    Cool rapidly, mature 4h. Churn and freeze.
