Preparation steps

    Bring milk, butter and vanilla to a boil. Cool to 50°C.

    Whisk yolks, sugar and flour (do not incorporate air).

    Pour milk into mixture, whisk gently.

    Add rum. Strain.

  5. 5

    Rest batter 24-48h refrigerated (essential).

    Prepare copper moulds: beeswax coat (or well-buttered silicone).

    Fill moulds ¾ full.

  8. 8

    Bake at 250°C for 10 min, then 180°C for 50-60 min.

    Unmould immediately.
