Preparation steps

    Bring 4/5 of the milk and part of the sugar to a boil, mixing well.

    Meanwhile, blend the yolks with the remaining milk, sugar, and the starch.

    Stir part of the milk into the previous mixture, whisking vigorously.

    Pour this mixture back into the saucepan off the heat, whisking vigorously.

    Return the saucepan to medium heat and cook until the first boil.

    Add the pistachio paste, mix well, and bring back to a boil — very important!

    Then stir in the gelatin mass.

    Let the cream cool to room temperature and, at about 40°, stir in the butter little by little while blending.

    Blast-chill the crémeux, covered with plastic wrap pressed directly onto the surface and split between 2 tubs.
