Preparation steps

    Roast red peppers and aubergines until charred.

    Peel, seed and drain well.

    Chop finely or blend to desired consistency.

    Cook slowly with oil, garlic, a splash of vinegar. Season.

    Cook down 30-45 min until thick.

    Jar while hot. Store refrigerated.
